This mouthwatering dessert is decadent and rich - perfect for all the chocolate lovers out there!
Ingredients
- 1 cup bittersweet or dark chocolate chips (recommended: Ghirardelli)
- 10 tablespoons (1 1/4 stick) butter
- 1/2 cup all-purpose flour
- 1 1/2 cups confectioners' sugar
- 3 large eggs
- 3 egg yolks (you can save the egg whites from these eggs for an egg-white omelet or breakfast the next day)
- 1 teaspoon vanilla extract (pure vanilla bourbon is really good extract)
Directions
- Preheat oven to 425 degrees F.
- Grease 6 (6-ounce) custard cups/ramekins.
- In a large-sized microwavable bowl, melt the chocolates and butter in the microwave. In another bowl, add the flour and sugar and whisk gently until well incorporated.
- Add the flour and sugar in small batches to chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla.
- Divide the batter evenly among the custard cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny.
- Let cool for a few minutes and top with whipped cream, ice cream, and some of your favorite berries! YUM!
- Tip: You can refrigerate the other cakes (unbaked) for up to 1-2 days if you and your guests or family don't plan on eating all the cakes in one sitting. Half an hour before you want dessert, let the ramekins sit for 15 minutes at room temperature, and then pop them into the oven and bake according to directions above.
