Hollandaise Sauce Quick Food Recipes
Hollandaise sauce also called Dutch sauce it was born in France and created by la Varenne. It is rich in favour made by eggs yolks, lemon juice, vinegar and butter.
It is High protein recipes served with blanched asparagus, Brussels sprouts and the most famous use of sauce with eggs Benedict.
Preparation time-5 minutes

Ingredients Quantity
Egg yolks 5
Clarified butter 200ml
Cayenne pepper 1 ½ tsp
Lemon juice 1 ½ tsp
Salt pepper 1
White wine vinegar reduction 2tspn
Method
1. Whisk egg yolks and lemon in a heatproof bowl.
2. Melt the butter till the whey and clarified butter in separate bowl. Use only the clarified butter and make sure the butter is cooled to around 70c.
3. Make a sabayon whisking the yolks and added vinegar reduction. Slowly add the clarified butter while whisking. Adjust the thickness with a little warm water correct the seasoning and keep in a warm place throw out after two hours.
